My NoNNa’s luscious oven baked pasta, featuring her legendary slow braised beef layered with freshly hand rolled pasta & aubergine topped off with Mozzarella. Serves 6 pax


400gm 2 large – Slow Braised Beef Aubergine (Western Eggplant)

2 sprigs – Fresh Thyme

100gm – Fresh Pasta

200gm – Mozzarella Cheese

To Taste – Cracked Black Pepper

2 teaspns – Olive Oil


  • Thinly slice the Aubergine lengthways, sprinkle with freshly cracked black pepper & fresh thyme leaves
  • Grill the aubergine till soft but with caramalised edges
  • Set aside
  • Roll out the pasta into thin sheets (lowest setting 1)
  • Cut into about 10inches x 5 inches sheets
  • Cook the pasta in salted boiling water (with a little Olive oil) for about 3 minutes
  • Set aside
  • Put a small layer of slow braised beef into the dish
  • Layer the pasta on top
  • Place a layer of Aubergine
  • Then a layer of mozzarella cheese
  • Now repeat the layering (slow braised beef, then pasta, then aubergine)
  • Finally top off with a generous layer of mozzarella cheese
  • Now it’s ready for the oven!
  • Oven bake at 180degrees for about 20-25 minutes.
  • Done!
